A food-service kitchen does not have one water problem, it has four, and they rarely get solved together. The espresso machine wants water of a particular character. The ice machine wants water that will not scale its evaporator plate or make cloudy ice. The glasswasher wants water that will not leave a film on stemware. And the guests want something clean and cold in a glass, which most restaurants in the UAE currently buy in, carry in, store somewhere and throw the packaging away.
The point of a plumbed-in system is that it answers all four from the incoming supply rather than from a delivery schedule. What follows is what each of those four demands actually is, what changes when water is treated at the point it enters the kitchen, and where the honest limits sit — including the parts of a commercial kitchen that a filtration system has no bearing on at all.
The four water jobs in a food-service kitchen
The coffee machine
Coffee is the one place where water is most of the product, and it is also the equipment most often ruined by the supply feeding it. There are two problems running in parallel. Chlorine is a taste problem, and it survives into the cup — a barista can dial in a grind all morning and not correct for it. Scale is a mechanical problem: it insulates the boiler element so the machine works harder to hold temperature, and it narrows the internal passages, which shifts the flow rate and therefore the extraction. The coffee goes off long before the machine does, which is why venues change beans when the water was the variable.
The counter-intuitive part, and it matters when specifying: water with essentially nothing dissolved in it is not the right answer for a boiler either. It extracts poorly, it is aggressive towards boiler metals, and on plumbed-in machines the electrical level probe may not read it reliably, because that probe depends on the water conducting. A fully stripped output needs blending or a remineralisation stage before it reaches a boiler. The ice machine
Ice is the ingredient that touches almost every drink you serve and the one nobody thinks of as an ingredient. It carries whatever was in the water it was frozen from, including chlorine, which is why a spirit and mixer can taste faintly of a swimming pool in one venue and not in another using the same brands.
Mechanically, an ice machine is a scale trap. Water is repeatedly frozen and harvested off an evaporator plate, and anything dissolved in it concentrates on that plate every cycle. Scale there slows the harvest, makes cubes stick, produces cloudy ice that melts faster and dilutes drinks quicker, and eventually has the machine running longer for less ice. Ice machines are expensive to repair, and the failures are almost always scale-related.
The glasswasher and dishwasher
The complaint is always the same — a film on the glassware that the staff polish off by hand at the end of service. That film is usually mineral deposit left when the drops dried rather than anything the detergent did, and polishing it off is labour you are paying for every night. Inside the machine, the heating element and the spray jets scale in the same way a domestic dishwasher’s do, so the wash pattern degrades over time. Drinking water for guests
The largest of the four, and the only one your guests have an opinion about. It splits into still and sparkling, and for most UAE venues it is currently a bottled operation.
What bottled water actually costs a venue
We will not put a number on this, because it depends entirely on your covers, your brand and what you charge. What is worth spelling out is where the cost sits, because most of it is not the invoice.
- Storage. Bottled water is heavy and bulky, and in a UAE restaurant the space it occupies is expensive space. Chilled stock also needs fridge capacity that could be holding something you sell at a higher margin.
- Handling. Someone receives the delivery, checks it, stacks it, rotates it, chills it, carries it to the service area and takes the empties out. That is staff time every day and it never appears as a line item.
- Running out. Sparkling has a habit of finishing mid-service, and the answer is either a runner sent out or a guest told no.
- Waste. A venue serving bottled water generates a visible stream of empty glass or plastic every night, with the disposal and the optics that come with it. For a restaurant that has made any sustainability commitment to its guests, this is the one operational detail they can see from the table.

What a plumbed-in system changes
A commercial drinking-water system takes the incoming mains supply, treats it, and delivers it on demand at the service point. There is no stock, no delivery and no empties. Water is produced at the moment it is poured, and the constraint becomes the machine’s throughput rather than what is in the store room.
Sparkling is the part most venues do not realise is available. Our commercial Fizzy and Aqua Bar machines carbonate on demand, so a venue can pour still and sparkling from the same plumbed-in installation and stop buying either in. This is genuinely commercial equipment and is not something a domestic under-sink or counter-top system does — no household filter produces sparkling water, and anyone claiming otherwise about a domestic unit is describing a different machine.
The other thing a venue usually wants alongside this is chilling. It is worth being clear that filtration and cooling are separate functions. A filter removes things from water; it does not change its temperature, and tap water in this country is warm all year round. Cold water requires a chiller as part of the specification, which is a normal part of a commercial installation but is a deliberate choice rather than something that arrives by default.
Specifying by emirate, not by catalogue
All UAE tap water is desalinated seawater, but what happens to it between the plant and your kitchen varies across the country, and it changes what equipment is appropriate.
In Dubai and Abu Dhabi, the supply arrives with very little dissolved in it. The real issues are the chlorine kept in the water to protect it on its journey, plus whatever the building’s own tank and internal pipework contribute. A well-specified carbon and fine-barrier system addresses exactly that, and for many venues in these two emirates it is the right answer rather than a compromise.
In Sharjah, Ras Al Khaimah, Fujairah and Umm Al Quwain, more groundwater enters the supply and there is a genuine dissolved load. That is the problem reverse osmosis was designed for, and in those emirates RO is the appropriate specification rather than an upgrade — particularly where an ice machine and an espresso machine are on the same line. Reverse osmosis is also a perfectly reasonable choice anywhere for an operator who simply wants the most thorough system, which is a preference rather than a diagnosis.
What nobody can do from a distance is tell you what is in your particular supply. We are not a laboratory and we do not test or measure water, and any supplier offering a free water test while quoting you for equipment is worth a second look. What we do look at, and what actually determines the specification, is throughput, the equipment already in the kitchen, the space, the drainage and the power available.
Maintenance is the whole thing in a commercial kitchen
In a home, a neglected filter is a disappointment. In a restaurant it is a service problem, because everything downstream depends on it — the ice, the coffee, the glassware and what the guest is drinking. Carbon exhausts by capacity rather than by time, so a saturated cartridge quietly stops doing anything while looking exactly as it did on day one, and the first sign is usually a complaint rather than a warning light.
Every system comes with 12 months of warranty and 12 months of maintenance included. From year two, an active maintenance plan covers the scheduled visits and keeps that warranty alive, and for the Fizzy and Aqua Bar machines the PRO plan is AED 1,499 a year. What to work out before you ask anyone for a quotation
- Covers and peak. Not the daily total but the busiest hour, because throughput is what sizes the equipment.
- Still, sparkling, or both, and whether they are poured at the bar, at a service station or at the table.
- What else is going on the treated line — ice machine, coffee, combi oven, glasswasher.
- Where the equipment can physically live, with a drain and a socket within reach of it.
- When a technician can get in. A kitchen that can only be serviced between eleven and two is a real constraint and it is better said at the start.
