Most people think about filtered water as something you drink. Far fewer think about it as an ingredient. But if you look at what actually goes into a pot of rice, a cup of tea, a stock or a loaf of bread, water is usually the largest thing in there by a wide margin — and unlike everything else in the kitchen, it is the one ingredient nobody tastes before using.

So does it change the food? In some dishes, noticeably. In others, hardly at all. Here is where it matters and where it does not.

What is in the water by the time it reaches your kitchen

Tap water in the UAE starts as seawater. It is desalinated, treated to drinking standards, then chlorinated before it goes into the network. That chlorine is deliberate and it is doing an important job — a small residual of disinfectant, usually well under a milligram a litre, is what keeps the water safe across the journey from the plant to your building. Remove it at source and you would have a bigger problem than taste.

The catch is that chlorine has a smell and a flavour, both detectable far below anything that matters for safety. Your nose is a better instrument than most laboratory equipment for this particular compound. If you have ever caught a faint swimming-pool note filling a glass, or something slightly sharp in the steam from a kettle, that is what you are meeting.

Then there is the last leg. The utility is responsible for water quality up to your meter. After that it becomes the property owner’s responsibility — the storage tank, the pipework, the pump, the fittings. Dubai Municipality requires residential tanks to be cleaned by an approved contractor at least twice a year, which tells you plainly that tanks need cleaning. Whether yours was cleaned on schedule is not visible from the kitchen. That gap between the meter and the tap is the honest argument for filtering, and it applies to cooking as much as to drinking. The dishes where it shows, and why

The rule is simple: the more of the finished dish is water, the more the water’s character comes through.

Chlorine is volatile, so much of it evaporates during a long, open simmer — which is why a slow-cooked stew is fairly forgiving. It does not disappear from anything cooked quickly, covered, or barely heated. And in the dishes below, water is not a cooking medium that gets thrown away — it stays in the food.

  • Tea and coffee. The clearest test in any kitchen, and we will come back to it below.
  • Stock, soup and broth. You are deliberately building flavour into water and then serving the water. Anything already in it comes along.
  • Rice, couscous and grains. These absorb their cooking liquid completely. Whatever the water tasted of is now in the rice.
  • Pasta and boiled vegetables. Less absorbed than rice, but salted pasta water clings to everything, and vegetables pick up off-flavours easily.
  • Bread dough. Roughly two-thirds flour, one-third water. Bakers have argued about water for centuries for good reason.
  • Anything you dilute — squash, cordial, powdered stock, reconstituted milk. You are tasting mostly water with a flavour hint stirred through it.

Where it matters less: anything fried, roasted or grilled; anything where water is only a heat-transfer medium that gets drained away; and heavily spiced dishes, where a strong flavour profile covers the difference. If you cook mostly biryani and grills, you will notice this far less than someone who lives on tea and soup.

Coffee and tea: the honest test

A cup of brewed coffee is roughly 98% water. The beans contribute somewhere between one and two per cent of the finished drink by weight. Everything else in the cup — every note you are paying for when you buy good beans — is carried in, and shaped by, the water.

This makes coffee the fastest way to find out whether your water is doing you any favours. Brew the same beans, grind and ratio twice — once with tap water, once with filtered — and taste them side by side while both are hot. Most people can tell immediately. The chlorinated cup reads flatter and slightly harsh at the finish; the filtered one lets acidity and sweetness through. The same test works with tea, where a good black tea tastes noticeably cleaner.

Scale, kettles and the machines you paid for

Separate from taste is what water does to equipment over time. Dissolved minerals left behind when water evaporates form limescale — the chalky crust inside a kettle, the white film on a shower screen, the layer that slowly coats the heating element of a coffee machine or a steam oven. Desalinated supply in the UAE is not especially hard by international standards, but scale still shows up, and in parts of the country supplied by groundwater or by tanker deliveries, hardness can be considerably higher.

The cost is not cosmetic. Scale on a heating element insulates it, so the appliance works harder and takes longer to reach temperature. In an espresso machine it narrows the internal pathways and pushes the brew temperature off, which shows up in the cup before it shows up as a fault. Descaling helps, but it is a chore people skip, and the appliances that suffer most — coffee machines, steam ovens, combi ovens in a commercial kitchen — are the expensive ones. If you have a machine plumbed into the mains, feeding it filtered water is cheap insurance.

What boiling does — and what it does not

There is a common assumption that boiling water sorts everything out. It does one job very well and several jobs not at all, and the difference is worth knowing.

Boiling kills microbes. Bacteria, viruses and parasites do not survive a proper rolling boil. If contamination is the concern, boiling is genuinely effective, which is why boil-water notices exist.

Boiling does not remove metals. Lead, copper and other heavy metals are elements. Heat does not break them down and they do not evaporate. Health authorities are explicit about this: boiling is not a remedy for lead in drinking water.

Boiling actually concentrates them slightly. As water turns to steam, the metals stay behind in a smaller volume of liquid. Leave a pot boiling for twenty minutes and whatever was dissolved in it is now dissolved in less water. The effect is small, but it runs in the opposite direction to what most people assume.

Boiling does drive off some chlorine, which is the grain of truth behind the myth — a long open boil will reduce the smell. It also produces scale in your kettle and does nothing about sediment or metals. It is a partial fix for one problem, not a general solution.

The one everybody forgets: ice

People will happily filter their drinking water and then drop three cubes of unfiltered tap water into the glass. Ice is frozen tap water, it melts into the drink, and in a hot country it makes up a real share of what you actually swallow.

Worse, freezing does not clean anything. Anything dissolved in the water is still there in the cube, and freezer ice picks up odours from whatever is stored around it — which is why homemade ice so often tastes faintly of the freezer. Filtered water freezes into ice that tastes of nothing, which is what ice is supposed to taste of. If you have a filter, use it for the ice trays too, and cover them.

A reasonable way to think about it

Filtered water will not turn an average cook into a good one, and it will not rescue a bad recipe or cheap ingredients. What it does is remove a variable you were not controlling — a faint chemical note running underneath everything mostly made of water, and a slow build-up of scale in appliances you spent money on.
